carnivore Pringles

Ingredients

  • Grass finished sirloin steak - 9oz (yes… you can use ground beef instead)
  • Grass fed beef tallow - A LOT
  • Grass fed gelatin powder - 1 teaspoon.
  • Eggs - 2.
  • Salt.

Steps

1Grind your steak.
2Heat up a pan with a bit of tallow - brown the beef and let most of the moisture evaporate - we want it slightly moist, not completely dry. Set aside.
3Mix warm a tablespoon of water with the gelatin powder.
4Crack a couple of eggs, we only need the egg whites. Whisk until foamy. Add half a teaspoon of salt, and add everything to a food processor - I do not have one hence the shaking of the blender.
5Blend well into a paste.
6Preheat oven to 200f.
7On baking sheet, non bleached parchment paper - by hand, shape the mixture into uniform shape pringles. Make them flat and thin. Even thickness is key. The shape will come when they dry.
8Put in the oven for 90-120 min to dry.
9Remove from oven.
10In a pan, melt tallow for deep frying (350f if you got a thermometer).
11Add in the pringles - roughly 30 seconds.
12Dry on a cooling rack. Salt again. Let cool.
