Carnivore TWIX

Ingredients

  • Regenerative 100% grass fed beef tallow (link to best tallow in the world on in my bio) - 1 tablespoon
  • Grass fed top round steak (thinly cut) - 8oz
  • Organic date syrup - 4 tablespoons
  • Organic maple syrup - 2 tablespoons
  • Grass fed butter - 1 stick
  • Organic unsweetened chocolate - 1 bar
  • Eggs - 1
  • Parmesan crisps.

Steps

1Oven 180f - dry the beef - could take between 5-10 hours depending on thickness.
2When the beef is dried, blend it in a mixer to make beef flour.
3Pre heat oven to 350f.
4To the beef flour add, 2tbs date syrup, egg. Mix.
5On a baking sheet with unbleached parchment paper add the mixture and flatten it - we need it thin - this is going to be our base layer for our Twix.
6Bake at 350f for 10 min and let cool before handling.
7In a pan add 1 sticks of butter over medium-high heat and keep stirring until caramelized, then add 2 tablespoons of maple syrup. Then pour butter in a small baking sheet with unbleached parchment paper, and place in the freezer for a few minutes. We’re aiming for it to be not too thick, check out the butter size in the video.
8Chocolate. Add to pyrex bowl and place ontop of a pot that’s filled with water.
9Add 1 tablespoon of tallow and 2tbs date syrup as a sweetener.
10Mix.
11Assemble.
12Cut base layer, Parmesan crisps, and maple butter to Twix size.
13Use melted chocolate as glue between layers. Layer.
14Top everything with chocolate to seal.
15In the fridge for 30min.
