Ingredients
- Grass fed butter - 1/2 stick
- Grass fed heavy cream - 1/4 cup
- 5 eggs
- Baking soda - 1/2 teaspoon
- Apple cider vinegar - a touch
- Organic rice paper - 10 (for 2 croissants)
- Uncured organic Calabrese
- Gruyere cheese
Steps
1Brown the butter. Set aside to cool or in the fridge for 5 min.
2Then add heavy cream, 5 eggs, baking soda, apple sider vinegar.
3Whisk.
4On parchment paper in a baking sheet, add the coating.
5Dip 1 rice paper at a time and stack 5 rice papers per 1 croissant.
6Cut the stacked rice papers. We’re going for one big triangle in the middle, and two small triangles on the side. Then fold the two small triangles onto the big one, and roll into croissant shape.
7Bake at 350f for 30 min or until golden brown.
8Let cool. Add your Calabrese, cheese, fried egg.
