my carnivore bars
Ingredients
- Grass fed beef eye round
- Grass fed beef tallow
- Salt
- Honey (optional)
Steps
1Get eye round. Slice it thin. Ask your butcher to do it for you.
2Place on a cooling rack on top of a baking sheet, space the cuts, and into the oven on the lowest setting (mines 170f). Leave the oven door slightly open so moisture can escape.
3After 3-4 hours when the meat is drier I took it out and cut it even more thinly. Again place on the cooling rack and back in the oven.
4This took around 15 hours to completely dry this time.
5When it’s dry blend it into a beef flour - see consistency in video.
6Then weigh it on a scale.
7Go for a 1:1 tallow to beef flour ratio.
8Melt your tallow and pour on to the flour.
9Add salt (and honey if you choose to).
10Mix well. Place on a small baking sheet and spread evenly.
11Into the fridge for 4-5 hours and that’s it - just cut into bars and enjoy! I like to add raw honey on top of the ready bars! Top level.
